VEGAN PEACH CRISP WITH CHOCOLATE ICE CREAM

There are tons of peach crisp recipes out there, but finding a vegan and healthy one is not that easy. That’s why I’m sharing this amazing recipe with you today. This deliciously juicy and crunchy peach crisp served with homemade chocolate banana ice cream is everything you need this summer. Double or triple the batch and you´ll have the perfect breakfast and snack ready in your fridge.

I don´t know about you but I’m a fan of desserts that combine cold and warm ingredients and I enjoy this kind of recipes even more during summer. I´ve been craving this kind of combo for a few days now so, on Sunday morning, I decided I couldn’t wait any longer and I headed to the kitchen as soon as I got up. That’s how this brilliant peach crisp came to life and I´m so incredibly addicted to it at the moment.

 

Granola oats

 

This vegan peach crisp is oil-free and probably the healthiest one you´ll find on the internet. So healthy that, even though it tastes kind of like dessert, you can have it for breakfast everyday and even feel good about it.

Picture this: baked, sweet, juicy peaches topped with warm crunchy oats that scream: “eat me with a good scoop of melty chocolate ice cream”. Yes, that’s what I’m talking about.´Even though I ate this a couple hours ago,  I´m actually mouthwatering as I´m writing about it.

Ok, done talking about this Vegan Peach Crisp´s deliciousness. Now let’s talk about how easy this is to make:

  1. Cover the bottom of a baking dish with chopped peaches.
  2. Mix oats with maple syrup, almond butter and vanilla powder.
  3. Top the peaches with the above mixture.
  4. Bake and you are done.
  5. Step 5 for out of this world deliciousness: top with homemade chocolate banana ice cream (just frozen bananas mixed with cacao powder and a splash of non-dairy milk).

 

And the final and most important step: fill up your mouth with spoonfuls of this deliciously sweet and crunchy combo, while tearing up from happiness. You are welcome.

VEGAN PEACH CRISP WITH CHOCOLATE ICE CREAM

This Vegan Peach Crisp is oil-free and probably the healthiest one you´ll find on the internet. Baked, sweet, juicy peaches topped with warm crunchy oats that scream: “eat me with a good scoop of melty chocolate ice cream”.

Ingredients

  • 2 cups rolled oats
  • 6 ripe peaches, chopped (no need to peel them but you can if you want).
  • 3 tablespoons almond butter (can be substituted for cashew butter)
  • 3 tablespoons maple syrup (can be substituted for agave or rice syrup)
  • ¼ teaspoon vanilla powder (optional)

Instructions

  1. Preheat oven to 180ºC.
  2. Add chopped peaches to a baking dish and spread on the bottom.
  3. Mix the rolled oats, the maple syrup and the almond butter until well combined.
  4. Spread the mixture over the peaches.
  5. Bake at 180°C for 30 minutes.
  6. Serve with a scoop of vegan ice cream. I recommend this banana ice cream recipe. Just add a tablespoon of cacao powder for a chocolate version.
