This Vegan Peach Crisp is oil-free and probably the healthiest one you´ll find on the internet. Baked, sweet, juicy peaches topped with warm crunchy oats that scream: “eat me with a good scoop of melty chocolate ice cream”.
Ingredients
2 cups rolled oats
6 ripe peaches, chopped (no need to peel them but you can if you want).
3 tablespoons almond butter (can be substituted for cashew butter)
3 tablespoons maple syrup (can be substituted for agave or rice syrup)
¼ teaspoon vanilla powder (optional)
Instructions
Preheat oven to 180ºC.
Add chopped peaches to a baking dish and spread on the bottom.
Mix the rolled oats, the maple syrup and the almond butter until well combined.
Spread the mixture over the peaches.
Bake at 180°C for 30 minutes.
Serve with a scoop of vegan ice cream. I recommend this banana ice cream recipe. Just add a tablespoon of cacao powder for a chocolate version.
