MANGO ALMOND ICE CREAM

Tasty, easy to make, refreshing…this mango ice cream is everything you need this summer. You only need two ingredients and a food processor. Rich in vitamins A, C, E and calcium, copper, manganese, magnesium, phosphorus and zinc, not only is this mango almond ice cream delicious but also highly nutritious!

SUMMER…can I love it more? Sun, sand, getting tan, summer clothes, having horchata in a terrace and…ICE CREAM. Because what would be a summer without a sweet and refreshing ice cream?

Anyone that knows me can tell that I´m a banana ice cream lover. But I recently discovered another favourite: Mango Almond Ice Cream. Seriously, if you like mangoes,  this ice cream is for you. For a low-fat version, you can definitely turn this into a sorbet, just by omitting the almond butter, and it will still be delicious. But I personally fell in love with the richness and creaminess that the almond butter brings to this recipe, so for extra yumminess, I would recommend you to stick to the original recipe.

I used frozen mangoes from the store (yeah, call me lazy) but you could buy fresh ones, peel them, chop them in small pieces and freeze them. Just make sure they are ripe, otherwise the ice cream won´t be sweet enough.

Ready for some refreshing and non-shareable mango almond ice cream? Then head to the store, buy some frozen mango and almond butter and get asap in the kitchen!

MANGO ALMOND ICE CREAM

Yield 8 ice cream scoops

Tasty, easy to make, refreshing...this mango ice cream is everything you need this summer. It´s vegan, oil-free, gluten-free and soy-free.

Ingredients

  • 2 and 1/2 cups frozen mango chunks.
  • 4 tablespoons non-dairy milk.
  • 4 tablespoons almond butter (reduce or omit for a low-fat version).

Instructions

  1. Combine all the ingredients in a food processor or high speed blender.
  2. Blend until creamy. Stop to scrape down the sides as needed.
  3. Serve and enjoy!
