Well, hi, friends! I´m going to be brief today because I have a million things to do for uni but don’t let the simplicity of this recipe fool you! This is an AMAZING recipe! These loaded sweet potatoes are so simple to make but also super delicious and incredibly nutritious! The thing is, pretty much anything that involves sweet potatoes equals a good dose of nutrients! As Dr.Greger says, sweet potatoes are power houses of nutrition!!!

And now to the point. Just bake your sweet potatoes, add some awesome toppings such as beans, corn, green onions…drizzle with some non-dairy yogurt, tahini and…you are pretty much done !!! Easy peasy and oh! so delicious! The perfect meal for fall, no matter whether you wanna make it for breakfast, lunch or dinner!

LOADED SWEET POTATOES

Perfect for breakfast, lunch or dinner. This loaded sweet potatoes taste bomb, are super easy to make and highly nutritious!

Ingredients

  • 2 big sweet potatoes

For the toppings:

  • 1 cup cooked black beans
  • ½ cup corn
  • ⅓ cup chopped green onions
  • ¼ cup non-dairy yogurt
  • ¼ cup magic tahini sauce 

Instructions

  1. Bake sweet potatoes at 180ºC for 45-60 minutes, or until fork tender.
  2. Cut sweet potatoes in half, mash the flesh with a fork and add a pinch of salt.
  3. Add the toppings and drizzle with non-dairy yogurt and magic tahini sauce
  4. Serve while still warm and enjoy.
