STRAWBERRY OATMEAL PANCAKES

Deliciously sweet and packed with vitamins and minerals. These strawberry oatmeal pancakes and the perfect start of the day!

  1. In a big bowl toss the dry ingredients: flour, oats, baking powder, baking soda and salt. Mix well.
  2. Make a well in the dry ingredients and pour the non-dairy milk in.
  3. Stir slowly and gently until just combined. Do not overmix the batter or your pancakes will be dense and tough.
  4. Add the chopped strawberries and combine again gently.
  5. Heat a non-stick pan over medium-high heat.
  6. Once hot, drop some batter on the griddle. Cook until bubbles begin to form on the top of the pancake and the edges look dry. Flip and cook on the other side for about 1 more minute.
  7. Serve with non-dairy yogurt, maple syrup, some more strawberries and any other toppings of your choice.

Notes

  • If you want the pancakes to be sweet by themselves, without having to add any syrup, add 4-6 tablespoons of unrefined sugar to the dry ingredients.
