WHAT I ATE TODAY 1
Hello there! After a long break, I´m finally back:)
I don´t have much more free time than before, actually quite the opposite, since I already started the studies to became a registered dietician (yey!). Anyway, I missed blogging so I had to come back 🙂
I was not sure how to do it, since I won´t be sharing recipes… BUT! don´t got yet 🙂 I´m working on a new project and it´s taking me a lot of time and effort, but I´m so sure you will love it and it would have been 100% worth it. So I´ve been brainstorming and I came up with a few ideas that I think are pretty interesting! And one of them is exactly this one 🙂 A new section on my blog where I will share lifestyle-related things, like for example, “what I eat in a day” posts. The thing is, that even though I love cooking and experimenting in the kitchen, my daily meals are pretty simple and I love it that way. I really enjoy simple meals that are easy and fast to prepare. I thought this could be helpful for those looking for simple meal ideas. I will probably publish a few days later since I don´t always have the time to write the post the exact same day.
Soooo, let´s talk food, shall we?
This morning I prepared almond milk. It is soooo easy to make and SO much better than store-bought almond milk. I understand though that if you are a busy person (ahem, ahem!…) it is not something you might be able to prepare on a daily basis. That´s why I only prepare it some weekends. And you know? Preparing porridge with homemade almond milk, means taking it to another level. And since I like it better when it´s fresh, I used it all up during the day. I used it to make porridge for breakfast, porridge for a middle evening snack with raspberries and blueberries (as in the picture above) and to make a simple but super delicious chickpea curry.
Breakfast was porridge made with rolled oats. I just cook them in water and then add a splash of almond milk and any toppings I like. This time it was oat cereal (no added fats and low in sugar content), a tablespoon of unsweetened soy yogurt, and defrosted strawberries with a tablespoon of strawberry marmalade. The result? Give-me-three-servings-please porridge 😛
Lunch was jasmine rice with a chickpeas curry that I prepared in 5 minutes. It´s just canned chickpeas, warmed up in a pan with a splash of almond milk, curry powder, onion and garlic powder, pinch of salt, sriracha, mustard and nutritional yeast. I added a teaspoon of arrowroot to make it slightly thicker. Then I served it with arugula and my sweet mustard dressing.
And voilà. In less that five minutes you have this delicious meal waiting to be devoured.
And finally dinner. It is simple, yes (just like all the meals that you will see in this section) but it´s like a party of flavors in your mouth. Baked sweet potato slices, steamed broccoli, sautéed kale (5 minutes using a non-stick pan and no oil!), and then drizzled with with a little bit of my everyday gravy and my sweet mustard dressing. By the way, if you haven´t tried to combine this two sauces in one dish, you have no idea what you´re missing. You´ll probably see this combination pretty often around here. Maybe I should have named them everyday 1 and everyday 2 dressings 😀
